Taquitos Recipe

Homemade Taquitos Recipe
Never dry, always crunchy, with a touch of salt.
Seriously better than any taquitos you'll order at a restaurant.
Mmmmm, Mmmmm good.


Since as far back as I can remember, this has been one of my all-time favorite comfort meals. When my Momma makes her yummy taquitos, I turn into a teenage boy--as in I eat about a dozen. It's not pretty, but it sure feels good.
My grandma {Dad's Mom} taught my Mom how to make these way back when my parents were newly weds. 

  
Ingredients:
Vegetable Oil
Canned Roast Beef
Corn Tortillas
Salt


First, open the roast beef and break apart the clumps with a fork until their are no large pieces.

Next, microwave about 10 tortillas at a time until soft enough to roll without breaking. Be sure to wrap them in paper towels or cover them with paper plates before you microwave so they don't get rubbery.


Spread a heaping tablespoon worth of meat onto the edge of a tortilla.

Tightly roll up the tortilla and place in a cookie sheet seam side down.
Continue this step will all your tortillas {make a lot, trust me}.


Once all the taquitos are prepped, you are ready to start frying them.
Pour enough vegetable oil in the pan to cover the bottom.
Turn the burner onto medium/high heat and wait for the oil to get hot.
  

Use tongs to place the taquitos seam side down in the pan.




Taquitos should take approximately 5 minutes to brown on one side (takes longer for a larger pan). Once brown on one side, flip with the tongs.
Sprinkle salt to taste while they finish cooking.


Remove the taquitos from the pan and place on a paper towel lined plate to remove excess grease. And of course, top with cheese.

Thanks for posting this; I am always looking for quick & easy dinner ideas... this is a dinner item, right? Not just a snack? My family will eat the beef, but I am a vegetarian- does anyone know of a substitute filling (besides soy meat)? Like chopped roasted veggies (if so, please post your recipe and how-to).

I was wondering if your beans are from a recipe, or from a can? They "look" better than your typical can of beans...

Also, just wanted to chime in that I am another reader whose words disappear as I scroll down- thought it was just me!

Those look delicious and will be on my dinner menu within the next few days! I like the tip on heating the tortillas, I hate using them bc they break so easily.
Randi - you can buy canned chicken (i get mine at Sams) that would work exactly like this, oh and it's better if you brown it up a bit in a pan instead of using it straight from the can.

Oh my gosh-I LOVE taquitos!! I would have made this recipe SO much more difficult than needed...canned roast beef! Of course!!

These are SO on the menu for next week!!! Now...I need a salsa recipe to rival my favorite taco shop....maybe I should search your blog or Pioneer Woman : ) Can't wait to make me about 50 of these...yeah...I get the teenage boy thing going around things like this too! <3

Yum! I love taquitos. I make chicken taquitos filled with chicken, salsa, cream cheese, grated cheese, and corn. I do mine on a pampered chef stone in the oven, spritzed with cooking oil spray (like Pam)... a little lighter than frying, but still crispy and tasty!
taquitos and fajitas and quesadillas are my favourite foods. Yummmmmmmm.

hahahaha! I tried to make these and must have used too much oil b/c it caught on fire! We got really lucky that it didn't catch anything else on fire. There was a lot of smoke damage but it could have been much worse. hahaha
